Bacolod's best chicken 'inasal' was recognized as the 5th best chicken dishes in the world by the food website TasteAtlas for the month of October.
According to the website, Aida's Manokan earned a score of 4.6 out of 5. "Inasal na Manok" ranked fifth in the TasteAtlas' Top 50 list posted on Friday.
Ida's restaurant located at the 'Manokan Country" in Bacolod City is known for its juicy and delicious grilled chicken that are best dipped in 'sinamak' and chicken oil.
The website has described chiken inasal as a "unique Filipino grilled chicken dish which originated in Bacolod and became the signature dish of the entire Visayas region," it said.
"It employs various chicken cuts marinated in a mixture of vinegar and numerous spices such as lemongrass, garlic, and ginger," it added.
The TasteAtlas also shared the procedure on how to prepare the best Bacolod chicken 'inasal'.
"During grilling, the meat is brushed with the annatto-infused oil which provides the chicken with an appetizing golden color and a unique peppery flavor. The dish is usually served alongside annatto-flavored garlic rice and spiced vinegar," it said.
Peru's Pollo a la brasa, meanwhile, topped the TasteAtlas best chicken dishes with a score of 4.9 out of 5. It is a charcoal-grilled chicken often marinated with vinegar, salt, pepper, rosemary, chili, and dark beer.
